Nik's Magic Meatballs. Ingredients. 1 lb. lean meat (turkey, beef, whatever…) 1 package onion soup mix. 1/2 c. Textured Vegetable Protein (if you're going, "what's that?" click here) 2 light mozzarella string cheese sticks, cut into 6 equal pieces. 1 extra large egg, beaten. Blend until smooth. In a separate bowl, mix the ground turkey, onions, chili powder, salt and pepper. Shape the ground turkey mixture into 16 meatballs. Heat a large pan over medium high heat, lightly coated with 2 teaspoons of olive oil. Cook meatballs for about two minutes on each side, making sure to brown all sides.
Preheat oven to 400 degrees. Chop your jalapenos, green onions, and cilantro. Add the ground turkey, egg, seasonings, jalapenos, green onions, and cilantro to a bowl. Mix well with your hands.
